Garden Bruschetta

  1. In a bowl, mix together the tomatoes, red onion, cucumber, basil, olive oil, vinegar, capers and red pepper flakes.
  2. Generously season with salt and pepper.
  3. Let sit on counter for one hour.
  4. Meanwhile, brush olive oil on both sides of bread slices.
  5. Grill or broil until lightly toasted.
  6. Remove from oven and rub garlic halves on top of bread slices.
  7. Spoon tomato mixture on top of bread.
  8. Serve.
