Garlicky Cauliflower
- 6-3/4 qt. Fresh cauliflower florets Safeway 1 lb For $1.99 thru 02/09
- 3/4 cup Kraft Sundried Tomato and Oregano Dressing
- 4-1/2 cups red onions, sliced
- 3 cups red peppers, chopped
- 4-1/2 Tbsp. garlic, minced
- 1-1/2 cups Italian parsley, coarsely chopped
- 3/4 cup Kraft Shredded Parmesan
- Cook cauliflower in boiling water 4 to 5 min.
- or until crisp-tender.
- Meanwhile, heat dressing in large rondeau (or in large skillet for trial recipe) on medium-high heat.
- Add onions, peppers and garlic; cook 3 to 5 min.
- or until vegetables are crisp-tender, stirring occasionally.
- Drain caulflower.
- Add to vegetable mixture; cook and stir until heated through.
- Stir in parsley; sprinkle with cheese.
