Champagne-Dipped Strawberry Brochettes over Chocolate Sauce
- 4 squares or bars semisweet chocolate
- 1/2 c. heavy cream
- 20 extra-large strawberries
- 1 c. champagne or sparkling wine
- 8 bamboo skewers
- 4 sprig fresh mint (optional)
- In top of double boiler, over simmering water, heat chocolate and heavy cream, stirring constantly, until chocolate melts and sauce is smooth.
- Remove from heat; set aside to cool slightly.
- Heat indoor or outdoor grill to low.
- In medium-size bowl, combine strawberries and champagne; let stand 1 minute.
- Skewer 5 stem-end strawberry halves on each of 4 skewers.
- Repeat with tip-end strawberry halves.
- Coat grill rack with nonstick vegetable cooking spray.
- Place strawberry skewers, flesh side down; on rack.
- Grill 30 seconds, turn skewers and grill 20 seconds longer.
- To serve, spoon 2 tablespoons chocolate sauce in a swirl across center of dessert plate.
- Place one skewer of strawberry stem ends and another of tip ends in center of plate.
- Garnish with mint sprigs, if desired.
- Repeat to make 3 more desserts.
- Serve remaining chocolate sauce on the side.
