Champagne-Dipped Strawberry Brochettes over Chocolate Sauce

  1. In top of double boiler, over simmering water, heat chocolate and heavy cream, stirring constantly, until chocolate melts and sauce is smooth.
  2. Remove from heat; set aside to cool slightly.
  3. Heat indoor or outdoor grill to low.
  4. In medium-size bowl, combine strawberries and champagne; let stand 1 minute.
  5. Skewer 5 stem-end strawberry halves on each of 4 skewers.
  6. Repeat with tip-end strawberry halves.
  7. Coat grill rack with nonstick vegetable cooking spray.
  8. Place strawberry skewers, flesh side down; on rack.
  9. Grill 30 seconds, turn skewers and grill 20 seconds longer.
  10. To serve, spoon 2 tablespoons chocolate sauce in a swirl across center of dessert plate.
  11. Place one skewer of strawberry stem ends and another of tip ends in center of plate.
  12. Garnish with mint sprigs, if desired.
  13. Repeat to make 3 more desserts.
  14. Serve remaining chocolate sauce on the side.
