Smoked Turkey And Potato Salad Recipe
- 4 c. new potatoes, diced
- 1/4 c. onion, chopped
- 2 c. smoked turkey, diced
- 1/4 c. parsley, minced
- 1 c. fresh cut green beans (optional)
- 1 teaspoon dill (optional)
- Salt to taste
- Pepper to taset
- 1/2 c. mayonnaise with 3/4 c. lowfat sour cream or possibly 3/4 c. vinaigrette dressing,
- alone
- I love potato skins so I leave them on but if you do not, take them off.
- Bring potatoes to a boil in salted water.
- Reduce heat and simmer for about 10 min.
- Watch it or possibly you'll have mashed potatoes.
- Drain potatoes and refresh with cool water.
- Blanch green beans in boiling water for 3 min.
- Drain and refresh with cool water.
- Mix seasonings with mayonnaise and lowfat sour cream and toss all ingredients lightly.
- Or possibly toss lightly with Vinaigrette Dressing.
- VINAIGRETTE DRESSING: Mix together the vinegar, salt, mustard and pepper.
- Slowly add in oil, stirring to make an emulsion.
- Serves 8 to 10.
