A Bit of Everything Banana Bread
- 1 34 cups sugar
- 12 teaspoon salt
- 1 12 teaspoons cinnamon
- 12 teaspoon ground nutmeg
- 1 pinch ground cloves
- 1 teaspoon instant coffee (rub between fingers to break down)
- 1 34 cups flour (i use whole wheat, which results in an even denser bread)
- 14 cup rolled oats
- 14 cup cornmeal
- 12 cup canola oil
- 14 cup unsweetened applesauce
- 3 large eggs, room temperature
- 1 teaspoon vanilla
- 1 12 teaspoons baking soda
- 14 cup low-fat yogurt or 14 cup low-fat buttermilk
- 12 cup semi-sweet chocolate chips
- 5 very ripe bananas
- Preheat oven to 350F Spray 2 loaf pans or 1 bunt pan.
- In a large bowl, mash bananas with a masher or well-washed hands.
- Add all the ingredients except flour and chocolate chips.
- Add the flour and mixed just until combined.
- Pour half of the batter into the pan(s).
- Sprinkle chocolate chips evenly across the top and then add the remaining batter to the pan(s).
- Bake for 50-70 minutes, until a toothpick comes out almost clean but still collecting a few crumbs.
- Let cool 15 minutes after removing from oven and then remove from pan(s).
