Apple Walnut Muffins, Healthy Recipe
- 2 c. all-purpose flour
- 1 tsp baking soda
- 1/4 tsp grnd cinnamon
- 1/4 tsp grnd ginger
- 1/4 tsp grnd allspice
- 1/4 tsp grnd nutmeg
- 1/4 tsp salt rounded
- 2 lrg Large eggs
- 1 c. apple juice, frzn concentrate thawed, plus
- 2 Tbsp. apple juice, frzn concentrate thawed
- 2/3 c. buttermilk
- 2 Tbsp. oat bran
- 2 sm Granny Smith apples peeled, cored and minced
- 1/3 c. minced walnuts (about 1-1/3 ounces)
- 1 sm Granny Smith apple peeled, cored and cut into 12 thin slices
- Preheat oven to 375F.
- Grease 12 standard size muffin-pan c. or possibly line with paper liners.
- Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg and salt.
- Mix together Large eggs, apple juice, and buttermilk.
- Stir flour mix and oat bran into egg mix till dry ingredients are just moistened.
- Don't overmix.
- Gently stir in minced apples and nuts.
- Spoon batter into prepared pan, filling c. two-thirds full.
- Garnish each muffin with an apple slice.
- Bake muffins till lightly golden brown and tops spring back when pressed, 25 min.
- Transfer pan to a wire rack to cold slightly.
- Turn muffins out onto rack to cold completely.
- NOTES : Of course, I haven't had them WITH the buttermilk, but substituting the plain no-fat yogurt seems to have worked just fine.
- They are moist and moderately sweet.
- I didn't find the oat bran, so I bought a box of Quaker Oat Bran cereal and crushed it up, using it instead.
- The recipe only calls for 2 Tbsp., and I figure it's for added fiber.
