Fruited Raspberry Creme Parfaits
- 1 cup water
- 3/4 cup water
- 1 can (16 oz.) fruit cocktail
- 1-1/2 cups COOL WHIP Whipped Topping
- fresh mint
- Dissolve gelatin in boiling water; stir in cold water.
- Reserve 1/2 cup gelatin mixture; refrigerate remaining gelatin until slightly thickened.
- Stir fruit cocktail into thickened gelatin.
- Spoon mixture into 6 (8-ounce) parfait glasses.
- Tilt glasses and refrigerate until mixture is set.
- Refrigerate reserved 1/2 cup gelatin until slightly thickened; fold in 1 cup whipped topping.
- Spoon over set layer.
- Refrigerate until firm.
- Garnish with remaining whipped topping.
