Greek Alphabet Stoup

  1. Cook the pasta in boiling salted water according to package instructions.
  2. Then drain it and set aside.
  3. In the same pot (but off the heat), add the garlic, olive oil, lemon zest, vinegar, tomatoes, salt and pepper.
  4. Add the cooked and drained pasta and the spinach and place back over low/medium heat and cook just until the spinach wilts.
  5. Remove stoup from stove and add the feta.
  6. Garnish with an additional drizzle of olive oil if desired.
