Greek Alphabet Stoup
- 16 ounces, weight Alphabet Shaped Pasta
- 2 cloves Garlic, Minced
- 1 Tablespoon Extra Virgin Olive Oil
- 2 whole Lemons, Zested
- 1 Tablespoon Balsamic Vinegar
- 1 can (32 Oz) Diced Tomatoes
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 bag (10 Oz) Baby Spinach
- 8 ounces, weight Feta Cheese, Crumbled
- Cook the pasta in boiling salted water according to package instructions.
- Then drain it and set aside.
- In the same pot (but off the heat), add the garlic, olive oil, lemon zest, vinegar, tomatoes, salt and pepper.
- Add the cooked and drained pasta and the spinach and place back over low/medium heat and cook just until the spinach wilts.
- Remove stoup from stove and add the feta.
- Garnish with an additional drizzle of olive oil if desired.
