mirchi pakora
- 10 each large green chillies
- 1/2 cup veg oil for deep frying
- 4 large potatoes(peeled & boiled& mashed)
- 2 each spring onions(chopped)
- 1 medium onion(chopped finely)
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp red chilli powder(optional)
- 3/4 tsp salt
- 1 juice of half a lemon
- 2 cup besan(bengal gram flour)
- 1 tsp salt
- 1 tsp red chili powder
- 1/2 tsp carom seeds
- 1/2 tbsp hot oil
- 1 cup water
- for the batter::
- mix all the dry ingredients together in a bowl.add the hot oil.set aside
- for the filling
- mix all the ingredients well in a bowl.set aside
- for the chillies:
- slit each chili lengthwise & remove the seeds without removing the tops & without slitting it on the other side
- be careful while doing this.wear gloves.
- heat the oil in a deep bottomed frying pan or a deep fryer if u have it
- fil the chillies with a handful of the potato filling each such that its also coated halfway with the fillin on the outer skin too
- add water in parts to the dry batter & mix well to form a smooth flowin batter a little thinner than a pancake mix
- when the oil is hot(check by addin a drop of batter,it shud immediately rise to the top) dip each chilli in the batter & drop it in oil & fry til brown 2 at a time only
- remove with a slotted spoon & drain it on paper napkins to remove exces oil
- serve hot with ketchup or tamarind sauce
- note:u can use the same batter to make vegetable fritters too.slice veggies(potatoes,onions,capsicum,eggplant,cucumber),dip in batter & deep fry
