Summer Peach Pie
- pastry for a double-crust 9-inch pie
- 5 cups peach slices (fresh or frozen)
- 1 14 cups sugar
- 12 cup flour
- 34 teaspoon cinnamon
- 1 dash nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon of cold butter, cut into small pieces
- Preheat oven to 400 degrees.
- Roll out half of the pie crust to fit a 9" pie pan.
- Reserve the other half for the top.
- Toss together in a large bowl, the peaches, sugar, flour, spices and lemon juice.
- Pour into the prepared pie crust and dot with the cold butter.
- Roll out the second half of the reserved pastry, and put on top.
- With a sharp knife, cut a few slits to vent.
- You can sprinkle with a little milk or water, and then sprinkle with sugar.
- Cover the edges with foil to prevent over browning.
- Bake for 45-60 minutes.
- Serve warm with ice cream if desired.
