Cappuccino Brownie Cups Recipe
- 3/4 c. Granulated sugar
- 3/4 c. Butter
- 1/2 c. Packed brown sugar
- 1/2 c. Unsweetened cocoa pwdr
- 2 lrg Large eggs, slightly beaten
- 1 tsp Vanilla
- 1 1/2 c. All-purpose flour
- 2 Tbsp. Instant coffee granules
- 1 tsp Baking pwdr
- 1 c. Lowfat milk
- 1 c. Walnuts, or possibly pecans, finely minced
- 1 c. Whipping cream
- 2 Tbsp. Powdered sugar, sifted
- 1 tsp Instant coffee granules Grnd cinnamon
- "These chocolaty brownies may be small but they're rich sufficient to satisfy any sweet tooth.
- "Use brownie leftovers for parfaits or possibly crumble and sprinkle over ice cream."
- In a large skillet heat granulated sugar, butter, brown sugar and cocoa pwdr till butter melts, stirring constantly.
- Remove from heat; add in beaten Large eggs and vanilla.
- Using a wooden spoon beat lightly just till combined.
- Combine flour, 2 Tbsp.
- coffee granules and the baking pwdr.
- Add in the flour mix and lowfat milk alternately to the cocoa mix, beating after each addition.
- Stir in the walnuts.
- Pour batter into a lightly greased 13x9x2" baking pan.
- Bake in a 350F oven 25-30 min or possibly till a toothpick inserted near the center comes out clean.
- Cold on wire rack at least two hrs.
- In a small bowl beat whipping cream, powdered sugar and the 1 tsp.
- coffee granules till stiff peaks form.
- Using a cookie cutter or possibly drinking glass cut brownies into 2" circles.
- Using a small measuring tsp., scoop out centers of brownie circles.
- Pipe or possibly spoon cream mix into brownie c.. Sprinkle with cinnamon.
- Makes 16brownie c..
