Chicken Divan, My Version
- 1 FOR CHICKEN
- 1 1/2 lb boneless skinless chicken breasts cut into 1/4 inche slices
- 1/2 cup sour cream combined with 1teaspoon lemon juice
- 1/2 cup flour
- 1/2 cup grated parmesan cheese
- 1 tsp cajun seasoning
- 1 tsp black pepper and salt to taste
- 1 tbsp olive oil
- 1 tbsp butter
- 1 lb fresh broccoli cooked in boiling salted water until crisp tender
- 1 FOR SAUCE
- 1 small onion, chopped
- 2 minced garlic cloves
- 3 tbsp flour
- 3 tbsp butter
- 1 cup chicken broth
- 1 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/2 tsp cajun seasoning
- 1/2 tsp black pepper and salt only if needed
- 1 tsp hot sauce such as franks brand
- 1 tsp fresh lemon juice
- 1 FOR TOPPING
- 1 1/2 cup shredded cheese, I used a blend of pepper jack and sharp cheddar
- Line a heatproof platter with cooked broccoli.
- Combine flour,parmesan cheese, cajun seasoning, pepper and salt.
- Brush chicken lightly with sour cream, add to flour/ cheese mixture shaking off excess.
- Heat the olive oil and butter in a large skillet and sear chicken, turning once until golden and cooked through Remove chicken as done to top broccoli on platter..
- Preheat oven broiler to high, have your rack about 3 inches from broiler.
- Into skillet where chicken was cooked make sauce.
- melt butter, add onion and garlic and soften, add flour and whisk 2 minutes, it will be thick, add all sauce ingredients and whisk until smooth, bring to a boil and cook until thickened to a sauce consistancy.
- Top chicken with sauce, evenly top with shredded cheese.
- Place under broiler and heat until cheese melts and all is hot.
- Serve with crusty bread or rolls.
