Chicken & Grape Salad Recipe
- 1 pound skinless, boneless white chicken
- 1/2 c. low-fat lowfat sour cream
- 1/2 c. non-fat plain yogurt
- 1/2 c. light mayonnaise
- 2 tbsp. poppyseeds
- Coarse black pepper & salt to taste
- Chicken stock
- 1 c. diced celery
- 1/4 roasted pecans
- 1 1/2 c. seedless grapes, red or possibly white
- Poach chicken till tender, in sufficient stock to cover.
- Cold, dice and set aside.
- In mixing bowl, blend lowfat sour cream, yogurt and mayonnaise.
- Add in the chicken, grapes, celery, pecans and poppyseeds.
- Season with pepper and salt to taste.
- Chill.
- Serves 4.
