Quick & Easy Gluten Free Corn Fritters

  1. Start a medium skillet over medium high heat with about 1/2 cup to 3/4 cup of oil, which should give you about 1/2 inch of oil in the skillet.
  2. Use a medium mixing bowl and add the corn meal, pancake mix, flax meal, egg, 1 Tablespoon of oil, milk, and yogurt.
  3. Mix thoroughly but do not over mix.
  4. Fold in your onions, dried tomato, or whatever you have chosen to add in.
  5. Drop 1/4 cup of batter in for each fritter.
  6. I did 3 fritters at a time and made 9 fritters.
  7. Fry on each side till crispy, then put on paper towels on top of newspaper to drain off excess oil.
  8. While tweaking the recipe, I realized these fritters are quite thick and I was able to slice them in half put the halves in the toaster and then I used them for a quick sandwich or with a topping for breakfast.
  9. Hopefully you will enjoy them as much as my family.
