Quick & Easy Gluten Free Corn Fritters
- 1 Tablespoon Oil (Canola Or Olive, Your Choice), Plus Up 1/2 To 3/4 Cup For Frying
- 1 cup White Corn Meal
- 1/2 cups Bob's Red Mill Gluten Free Pancake Mix
- 1 Tablespoon (Rounded Tablespoon) Of Flax Meal
- 1 whole Large Egg
- 1/2 cups 1% Milk
- 1/4 cups Yogurt ( I Used Greek Style Plain)
- 2 Tablespoons Onions Or Chopped Dried Tomatoes Or Artichoke Antipasto
- Start a medium skillet over medium high heat with about 1/2 cup to 3/4 cup of oil, which should give you about 1/2 inch of oil in the skillet.
- Use a medium mixing bowl and add the corn meal, pancake mix, flax meal, egg, 1 Tablespoon of oil, milk, and yogurt.
- Mix thoroughly but do not over mix.
- Fold in your onions, dried tomato, or whatever you have chosen to add in.
- Drop 1/4 cup of batter in for each fritter.
- I did 3 fritters at a time and made 9 fritters.
- Fry on each side till crispy, then put on paper towels on top of newspaper to drain off excess oil.
- While tweaking the recipe, I realized these fritters are quite thick and I was able to slice them in half put the halves in the toaster and then I used them for a quick sandwich or with a topping for breakfast.
