Almond-Crusted Chicken Dijon
- 4 small boneless skinless chicken breasts (1 lb./450 g)
- 2 Tbsp. Miracle Whip Calorie-Wise Spread
- 2 Tbsp. Dijon mustard
- 6 Ritz 30% Less Fat Crackers, crushed
- 1/4 cup slivered almonds, coarsely chopped
- Preheat oven to 375F.
- Place chicken in lightly greased 13x9-inch baking dish; set aside.
- Mix Miracle Whip and mustard until well blended.
- Spread top side of each chicken breast with 1 Tbsp.
- of the dressing mixture.
- Mix crackers and almonds; sprinkle evenly over chicken.
- Bake 20 to 25 min.
- or until chicken is cooked through (170F).
