Quinoa Salad

  1. Bring quinoa and water to a boil in a saucepan.
  2. Reduce heat, cover and simmer until tender and water has been absorbed, 10 to 15 minutes.
  3. Set aside to cool.
  4. Whisk together in a bowl the olive oil, lime juice, cumin and red pepper flakes.
  5. Combine quinoa, tomatoes, black beans and green onions together in a large bowl.
  6. Pour dressing of choice over quinoa mixture.
  7. Toss to coat.
  8. Stir in cilantro.
  9. Season with salt and pepper if desired.
  10. Serve immediately or chill in the refrigerator.
