Quinoa Salad
- 1 cup quinoa
- 2 cup water
- 1/4 cup olive oil (I use extra virgin)
- 2 limes juiced, about 1/4 cup
- 2 tsp ground cumin
- 1/4 to 1/2 teaspoons crushed red pepper flakes
- 1 1/2 cup grape or cherry tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 to 1 teaspoon salt, to taste ( I use 1/4 teaspoon)
- 1/4 to 1/2 teaspoon black pepper, to taste
- 5 green onions, finely chopped
- 1 (15 ounce can) black beans, drained and rinsed (I used reduced sodium)
- Bring quinoa and water to a boil in a saucepan.
- Reduce heat, cover and simmer until tender and water has been absorbed, 10 to 15 minutes.
- Set aside to cool.
- Whisk together in a bowl the olive oil, lime juice, cumin and red pepper flakes.
- Combine quinoa, tomatoes, black beans and green onions together in a large bowl.
- Pour dressing of choice over quinoa mixture.
- Toss to coat.
- Stir in cilantro.
- Season with salt and pepper if desired.
- Serve immediately or chill in the refrigerator.
