Green Bean And Sausage Soup Recipe
- 4 slices bacon cut 1/2 inch pcs
- 2 med. size onions, minced
- 6 c. chicken stock or possibly canned broth
- 4 med. potatoes, peeled and cut into 1/2 inch cubes
- 2 med. carrots, sliced
- 1/4 c. minced parsley
- 1 teaspoon dill weed
- 1/2 teaspoon marjoram leaves
- 1/4 teaspoon white pepper
- 1 pound green beans cut into 1 inch lengths
- 1 pound Polish sausage, thinly sliced
- In a 5 to 6 qt pan, cook bacon over medium heat till crisp.
- Remove drain, set aside throw away all but 1 Tbsp.
- drippings.
- Add in onions, cook till soft.
- Stir in stock, potatoes, carrots, parsley, dillweed, marjoram and pepper.
- Simmer till potatoes are soft.
- Remove 1/2 vegetables and blend return to pan.
- Add in green beans and sausage bring to boil, cook uncovered till beans are tender.
- 6 to 8 servings.
