Quick Chicken and Shells With Fresh Mozzarella Cubes
- 12 cup fresh mozzarella cheese, cut into small cubes
- 14 cup fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 14 cup parmesan cheese, fresh grated
- 2 cups chicken, shredded
- 2 cups whole wheat pasta, your favorite shape
- 12 cup grape tomatoes, cut in half
- 14 cup zucchini, cut into bite sized pieces
- 2 tablespoons extra virgin olive oil
- salt
- pepper
- Cook pasta according to package directions minus 2 minutes and drain, reserving 1 cup of the pasta water.
- In a deep saute pan, melt olive oil over medium heat.
- Add zucchini and tomatoes.
- Cook 4-5 minutes.
- Add chicken, pasta, pasta water, and parmesan cheese.
- Cook for another 2-3 minutes.
- Remove from heat and add herbs and mozzarella cheese.
- Season to your liking.
- Serve and enjoy!
