Dad's Pickled Onions
- 6 lbs pickling onions
- 1 lb brown sugar
- 2 pints malt vinegar
- 12 tablespoon mustard
- 1 tablespoon turmeric
- 1 tablespoon curry powder
- 12 ounce whole allspice
- 2 tablespoons flour
- 1 12 cups salt, and
- 4 pints hot water
- Peel and cover onions with salt brine for 24 hours.
- Put vinegar into pan and when boiling add other ingredients which have been mixed to a smooth paste with cold water.
- Boil until thick and pour over onions in sterilized jars.
- Seal when cold and leave at least three weeks.
