Elmwood Salsa
- 1 mango, pureed
- 2 limes, rind and pith removed
- 2 spring onions
- 6 to 8 cherry tomatoes, halves
- 1 dash dried mint
- 1 dash dried red chillies
- Segment your lime and break up carefully into small chunks.
- Finely chop the spring onions, using mostly the green parts.
- Place lime chunks, spring onions and cherry tomatoes in a bowl and add the pureed mango.
- Add the mint and chillies and stir.
- Leave in the fridge for 1/2 hour to allow the flavors to develop, then serve with cold cuts and peppery salad leaves.
