Preppy Bow Ties With Chicken
- 8 ounces packaged dried bow tie pasta
- 8 ounces boneless skinless chicken breast halves, cut into thin strips
- 1 tablespoon olive oil or 1 tablespoon cooking oil
- 2 cups sliced fresh mushrooms
- 1 medium sweet red pepper, chopped
- 3 garlic cloves, minced
- 4 teaspoons cornstarch
- 12 teaspoon salt
- 12 teaspoon dried oregano, crushed
- 14 teaspoon black pepper
- 1 12 cups milk
- 1 (10 ounce) package frozen chopped spinach, thawed and well-drained
- 2 ounces thinly sliced turkey pepperoni, cut in half or 12 cup turkey pepperoni
- 14 cup grated parmesan cheese or 1 ounce parmesan cheese
- In a very large saucepan or pot, cook pasta according to package directions.
- Drain and return to saucepan.
- Keep warm.
- Meanwhile, in a large skillet, cook and stir chicken in hot oil for 2 or 3 minutes or until tender and no longer pink.
- Remove chicken, reserve drippings in skillet.
- Cook and stir mushrooms, red pepper, and garlic in skillet drippings over medium heat for 4 to 5 minutes or until tender.
- Stir in cornstarch, salt, oregano and black pepper.
- Add milk.
- Cook and stir until slightly thickened and bubbly; cook and stir 1 minute more.
- Stir in chicken, spinach, pepperoni, and Parmesan cheese; heat through.
- Pour over cooked pasta; toss to coat.
- Makes 4 to 6 servings.
