Herbed Chicken-N-Veggie Packet Dinner

  1. Preheat oven to 350.
  2. Marinate chicken in zip bag with Italian dressing for at least 1 hour.
  3. It's better longer.
  4. Cut chicken in chunks.
  5. In a bowl toss chicken with herbs, salt-n-pepper to taste.
  6. On a large piece of HEAVY-DUTY foil (that will fit the chicken and veggies, wrapped), put the chicken and veggies side-by-side in the middle.
  7. Bring ends in and fold over chicken and vegetables.
  8. Take the top pieces together and fold over but not right down on chicken/veggies.
  9. Poke a few holes to allow steam to escape.
  10. Place on baking sheet.
  11. Bake for 30-45 minutes.
  12. Serve with hot cooked rice, if desired.
