Lamb Chops with Pineapple-Peach Salsa
- 1 c. fresh pineapple
- 1 firm-ripe peach or nectarine
- 1/2 c. red bell pepper
- 3 tbsp. fresh mint
- 1 shallot
- 2 tbsp. fresh lime juice
- 1 tbsp. honey
- 8 one-inch thick loin lamb chops
- 1/4 c. bottled lemon pepper vinaigrette dressing
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- In medium bowl, combine salsa ingredients.
- Set aside.
- Preheat broiler.
- Place lamb chops on a broiler pan rack, brush with lemon pepper dressing.
- Broil 4 to 6 inches from heat source, turning once,10 minutes for medium-rare and 12 minutes for medium doneness.
- Sprinkle lamb chops with salt and pepper and serve with salsa.
