Flavorful Chicken Rolls

  1. Make a lengthwise slit through the thickest portion of each chicken breast to within 1/2 inch of the opposite side.
  2. Open chicken so it lies flat; cover with plastic wrap.
  3. Flatten to 1/4 inch thickness, discard plastic wrap and place a single layer of spinach over chicken.
  4. In a small bowl, combine the cream cheese, feta cheese, basil and pepper; spread over spinach.
  5. Top each chicken breast with a ham slice, trimming if necessary.
  6. Roll up and secure with toothpicks.
  7. In a shallow bowl, beat the egg and milk.
  8. Place bread crumbs in another bowl.
  9. Dip chicken rolls in egg mixture, then coat with crumbs.
  10. Place seam side down in a greased 15x10x1 inch baking pan.
  11. Bake, uncovered, at 375 degrees for 30-35 minutes or until juices run clear.
  12. Discard toothpicks before serving.
