Mom's Beet Pickles

  1. Cook beets until tender.
  2. Cool in cold water, and slide off beet skins.
  3. Leave tiny beets whole.
  4. Cut larger beets into chunks, or slice thickly.
  5. Pack into sterilized jars to within 1 inch from top.
  6. Brine:.
  7. Bring all ingredients to boil, and pour into jars filled with beets, to 1/2 inch of top of jar.
  8. Seal, and allow to sit for at least a few days.
