Luncheon Tostada Salad Recipe
- 1 pound grnd beef
- 1 pkg. Lawry's taco seasoning mix
- 3/4 c. water
- 3/4 teaspoon Lawry's seasoned salt
- 1 can (14 ounce.) red kidney beans, liquid removed
- 4 tomatoes, cut into wedges
- 1 avocado, cut into thin slices
- 1 pkg. (6 1/4 ounce.) tortilla chips
- 1 head lettuce, torn into small pcs
- 4 ounce. cheddar cheese, grated
- 1 c. minced onion
- 3/4 c Lawry's thousand Island dressing
- Brown grnd beef; drain fat.
- Add in taco seasoning mix, water, seasoned salt and beans.
- Cover; simmer for 10 min.
- Reserve some of the tomato wedges, avocado slices and tortilla chips for use as a garnish.
- Combine all of the remaining ingredients in a large salad bowl.
- Add in the grnd beef mix and lightly toss all of the ingredients.
- Garnish with the reserved tomatoes, avocado and tortilla chips.
- This salad is best served immediately.
- Makes 6 to 8 servings.
