Stuffed Pork Tenderloin
- 1/2 cups Melted Butter
- 2 cups Dried Cranberies
- 1- 1/2 cup Italian Bread Crumbs
- 1 teaspoon Minced Garlic
- 2 pounds Pork Tenderloin
- 2 Tablespoons Olive Oil
- 2 Tablespoons Minced Garlic
- Salt And Pepper, to taste

- Preheat the oven to 350 degrees F. 2.
- Mix the Stuffing ingredients in a medium mixing bowl.
- Set aside.
- 3.
- Fillet the tenderloin.
- 4.
- Place the stuffing mixture on the pork and roll it back up.
- 5.
- Drizzle some olive oil in the baking dish.
- 6.
- Place the rolled tenderloin in the baking dish and drizzle the remaining olive oil on top of the tenderloin along with the minced garlic.
- 7.
- Add salt and pepper to taste.
- 8.
- Place in the oven and cook for 27 minutes or until the pork is thoroughly cooked.
- 9.
- Take out of the oven and let stand for 3 to 5 minutes.
- 10.
- Plate up the tenderloin and enjoy!
