Pistachio Parsley Pesto
- 1 packed cup fresh parsley leaves
- 1/3 cup sour cream
- 3 tbsp olive oil, or more as needed
- 3 clove garlic
- 1/4 to 1/2 teaspoon salt
- 1/4 cup freshly grated Parmesan cheese
- 2 tbsp salted dry roasted pistachios
- In a blender, combine the pesto ingredients and process until smooth, adding more oil if necessary to create a saucelike consistency.
- *I serve this with angel hair pasta and boneless, skinless chicken breasts, but you can use it over grilled fish, pork medallions, or steamed shrimp as well.
