Fresh Tomato-Herb Rice
- 3 cups water
- 1 cup fresh cilantro
- 1 cup fresh parsley
- 2 cloves garlic
- 1 chicken bouillon cube
- 1 Tbsp. oil
- 1-1/2 cups long-grain white rice, uncooked
- 1 small onion, chopped
- 4 cups grape tomatoes, cut in half
- 1/2 cup KRAFT Authentic Mexican Style Finely Shredded Cheeses
- Blend first 5 ingredients in blender until smooth; set aside.
- Heat oil in large saucepan on medium heat.
- Add rice and onions; cook and stir 3 min.
- Stir in herb puree.
- Bring to boil; cover.
- Simmer on low heat 20 min.
- or until liquid is absorbed; cool 5 min.
- Fluff rice with fork.
- Stir in tomatoes; top with cheese.
