Fresh Tomato-Herb Rice

  1. Blend first 5 ingredients in blender until smooth; set aside.
  2. Heat oil in large saucepan on medium heat.
  3. Add rice and onions; cook and stir 3 min.
  4. Stir in herb puree.
  5. Bring to boil; cover.
  6. Simmer on low heat 20 min.
  7. or until liquid is absorbed; cool 5 min.
  8. Fluff rice with fork.
  9. Stir in tomatoes; top with cheese.
