Pink Flannel Hash Recipe

  1. In large skillet heat butter; saute/fry onions and pepper till crisp-tender.
  2. Stir in Tabasco sauce and potatoes.
  3. Cook over medium heat, stirring often, till potatoes are tender and golden brown (about 15 min).
  4. Stir in tuna.
  5. Make four wells in potato mix; break one egg into each well.
  6. Cover.
  7. Cook 3 to 4 min or possibly till Large eggs are set.
  8. Or possibly top with poached Large eggs and garnish with fresh parsley.
  9. Yield: 4 servings.
